Growing up I used to love rice crispy bars, so I decided to make a variation of the shop bought rice crispy bar and add some protein to it to make them a little more feeling.

These chocolate rice crispy bars are very easy to make. They don’t require any cooking and have only 6 ingredients, most of which are just different chocolates. It is definitely an easy to please snack!
Seasonality Information
This recipe does not really have a seasonality in terms of the ingredients as there are no fresh ingredients used. Although there are no fresh ingredients and therefore you can make this recipe any time you like. I prefer it in autumn, winter and spring only because I don’t enjoy chocolate as much in the summer, but this is a personal preference.
Chocolate Rice Crispy Bars Ingredient Swap Options
These chocolate rice crispy bars are made with caramel chocolate protein powder but you can use normal chocolate protein powder. I used caramel because I had a sample at home and I thought it would go well in a treat like this. The top of the cereal bars is with white chocolate but if you much prefer dark chocolate or milk one you can use that instead.

Dietary Variations
If you want to make these cereal bars vegan, you can easily do so! Make sure you buy vegan chocolate and your protein powder is vegan and you are good to go. To make this recipe gluten free, you can also buy in the supermarket a gluten free cereal.

This recipe is high in sugar, therefore I would recommend making this snack on occasion, or to share so that you don’t end up eating them everyday!

Chocolate Rice Crispy Bars

1. Weight and measure your ingredeints.

2. In a bowl add the rice crispies and protein powder and mix.

3. Put the peanut butter and honey in a microwavable bowl and heat up for 20 sec. Then mix well until both ingredients are well combined.

4. Add the peanut butter mixture to the bowl and combine with the rice crispies and protein powder.

5. Cover a square mold (size: 19 cm x 19 cm) with parchment paper and place the rice crispy mixture in. With your fingers or a spoon spread the mixture throughout the mold and flatten it up.

6. Place the white chocolate in a microwavable bowl and microwave for 30 sec. This may vary depending on your microwave so just have a look and check when the chocolate has melted.

7. Spread the melted white chocolate on top of the rice crispy base and sprinkle with chocolate chips.

8. Place it in the freezer for 1h. Then cut it into 6 bars and it's ready to eat!

Store in an airtight container in the fridge for up to 5 days.
